Menu Plan for Week of May 23, 2010

Last week, our favorite dish was the chicken drumsticks.  I’m not sure why eating with hands is so much fun.  We never got around to the seafood stew, so I’ve moved that to this week (using frozen seafood).  I also picked up a pastured chicken and we’re having one of my favorite meals of roast whole chicken with lots of garlic.  I also picked up some Kerrygold butter, OMG, it’s so tasty.

Breakfasts: Mushroom spinach omelets, Greek yogurt
Lunches: Leftovers, tuna salad with grapes, strawberries

Dinners:

Sunday: Crockpot garlic chicken, roasted carrots, sauteed spinach

Monday: Healthy Mexican chicken soup w/ avocado and cilantro, green salad

Tuesday: Stir-fry chicken with Chinese vegetables, vegetable sticks w/ tahini sauce

Wednesday: Brazilian coconut seafood stew (didn’t get to this last week), apple ginger coleslaw

Thursday: out

Friday:
Unstuffed cabbage stew, kiwis

Saturday: Mexican style meatloaf, Brussels sprouts, cucumber salad
