Menu Plan for Week of May 16, 2010

Last week, we really enjoyed the spicy stirfry with shrimp.  I purchased stir fry mix from the refrigerator section of Trader Joe’s and it all came together in less than 10 minutes.  For this week, I have an eclectic mix of foods and am looking forward to tinkering with a recipe for Brazilian seafood stew that is made with coconut milk, tomatoes, onions and peppers. I’ll post the recipe later this week if it turns out well.

Breakfasts: Spinach, artichoke frittata, strawberries, kiwi
Lunches: Leftovers, big salads like chopped chicken salad, apples

Dinners:
Sunday: Dry rub drumsticks, sweet potatoes, collard greens

Monday:
Thai spicy green beans (w/ turkey), roasted cauliflower

Tuesday:
Ginger scallion chicken, brussels sprouts, sliced tomatoes

Wednesday: out

Thursday: Brazilian coconut seafood stew, apple ginger coleslaw

Friday: Leftover stew, orange coleslaw, no-sugar blueberry crisp

Saturday:
Salmon potato cakes, steamed broccoli, strawberries
