Menu Plan for Week of May 9, 2010

Last week’s exploration into low carb eating was lots of fun (and mostly successful), and will be continuing this week.  We’re having lots of healthy protein, tons of salads,  and lots of veggies. I’m trying a meatloaf made with grassfed beef; I’ll post the recipe later.  So far, I haven’t missed chocolate or dessert.

Breakfasts: Eggs, Greek yogurt, nuts
Lunches: Big salads like the chopped chicken salad w/ avocado, apples

Dinners:
Sunday: Healthy Mexican chicken soup, salad, blueberries

Monday:
Dry rub chicken drumsticks, sauteed cabbage, sweet potatoes

Tuesday:
Thai red curry (made w/ salmon), steamed broccoli, salad

Wednesday:
Spicy stir fry with shrimp and Chinese vegetables, strawberries

Thursday:
out

Friday:
Meatloaf w/ grassfed beef, roasted broccoli, sweet potatoes

Saturday:
Spinach and artichoke frittata, avocado and tomato salsa, apple ginger coleslaw
