Menu Plan for Week of April 25, 2010

Last week, we really enjoyed the seafood gumbo that I made with shrimp and ham leftover from the freezer. For this week, I have fresh salmon on hand. This is a busy week, so the meals are simpler.

Breakfasts: Healthy granola, Greek yogurt, strawberries
Lunches: Leftovers, salads

Dinners:
Sunday: Poached salmon, crash hot potatoes, broccoli salad

Monday:
Leftover lentil stew, leftover greens, sliced pears

Tuesday: Loaded Miso Soup, green salad, strawberries

Wed-Thurs:
out

Friday:
Indonesian spicy rice, stir fried vegetables, ambrosia

Saturday:
Chopped chicken salads, quinoa salad, homemade sorbet
