Chopped Salad with Chicken

Like millions of people, I have been watching Jamie Oliver’s Food Revolution, and have ordered his cookbook. One of the recipes that I love is his versatile, easy chopped salad.  A combination of fresh ingredients, chopped into bite sized pieces on a big board, with a simple olive oil and balsamic dressing. What could be easier than that. Basing the recipe loosely from his cookbook, I now put diced avocado and slivered green onions in my salad. I tend to make it in a big bowl and toss, and add a simple protein like diced cooked chicken. You can add chickpeas, tofu or any of your own personal touches. I will be making this salad often (without chicken) this summer.

Chopped Salad with Chicken

4-6 cups salad greens
Sprigs of fresh herbs, such as basil, dill or cilantro
1 green onion, sliced into small pieces
6-8 cherry tomatoes, halved
1 small Persian cucmber, cut into small pieces
1/2 to 1 avocado, peeled, seeded and diced
1/2 cup shredded carrot
1 cup cooked chicken, shredded

2 T olive oil
1 to 1 1/2 T balsamic vinegar
1/2 t mustard
salt and pepper to taste

If you are making this in a bowl, chop the individual vegetables into small pieces and place in a bowl.  If you are making this on a board, chop all ingredients together. In a jar or small dish combine the dressing ingredients vigorously and pour over salad just before serving.

Looks delicious. I like to make my own dressings and this one looks really good.
