Menu Plan for Week of April 11, 2010
Last week the favorite was the old leftover cleanup standby Indonesian spicy rice, otherwise, it seemed to me that the meals were not so inspired. Ah well. This week, we are enjoying strawberries that seem to be on sale everywhere. Strawberries are my favorite fruit, but generally we have to wait until the deep summer months for the best tasting berries. I’m making a soothing rice porridge (jook) with homemade chicken stock which will counteract some of the blustery cold today. If it turns out well, I’ll post the recipe this week.
Breakfasts: Migas, refried beans, strawberries
Lunches: leftovers apples
Dinners:
Sunday: Rice porridge with chicken, cucumber salad, and kimchi, fruit
Monday: Super simple fish, spinach, potatoes, berries
Tuesday: Ham and okra stew, brown rice, salad, ambrosia
Wednesday: Crockpot pinto beans, collard greens, sliced pears
Thursday: out
Friday: Sweet potato and pinto bean chili, cornbread, salad
Saturday: Salmon fried rice, stir fried veggies, fruit salad
