Menu Plan for Week of April 4, 2010

Happy Easter and Passover to everyone.  We had a large ham dinner earlier in the week and will be having an Easter-style brunch today.  From last week, we really enjoyed the Korean rice bowls. I will be exploring ways to include more fermented foods, like kimchi, in our diet going forward.

Breakfasts: Low sugar granola, Greek yogurt, fruit, boiled eggs
Lunches:
leftovers, apples

Dinners:
Sunday: Easter Brunch: Artichoke and spinach frittata, ham, English muffins with spreads, winter fruit salad with topping

Monday: Ham and cabbage skillet made w/ white beans, brown rice, orange and greens salad

Tuesday: Indian spiced chickpeas, brown rice, sauteed vegetables, yogurt raita

Wednesday: Split pea soup (w/ hambone), brown rice, green salad, pears

Thursday: out

Friday: Salmon and potato cakes, brussels sprouts, healthy mashed potatoes

Saturday: Indonesian spicy rice, stir fried vegetables, fruit salad
