Menu Plan for Week of Mar 28, 2010

Last week, we really liked the garlic roasted chicken, especially the roasted garlic cloves. I used the chicken for 4 meals including a chicken soup and chicken fried rice.  For this week, we are having an Easter dinner early in the week. We’re having ham, which is hubby’s favorite.  I’m looking forward to the asparagus.

Breakfasts: Scrambled eggs, oat pancakes, low sugar blueberry syrup, fruit
Lunches: Leftovers, apple slices

Dinners:
Sunday: Korean rice bowls, kimchi, sauteed spinach, cucumber salad

Monday: Speedy red beans and rice collard greens, pears

Tuesday: Tofu fried rice, stir fried vegetables, winter fruit salad

Wednesday: Early Easter dinner: Ham w/ pineapple salsa, smashed potatoes, asparagus, green salad

Thursday: Ham and cabbage skillet (w/ white beans), sweet potatoes

Friday:
out

Saturday: Split pea soup (leftover ham bone), brown rice, apple ginger coleslaw
