Dry Rub Drumsticks
I am continually searching for simple chicken dishes that I can pop in the oven or crockpot and then forget. One cut of chicken that’s pretty forgiving are drumsticks, which are also fun to eat, and inexpensive relative to chicken breasts. I like to use a dry rub on drumsticks on organic chicken, rather than a honey or sugar based barbecue sauce, to prevent burning. Then I serve with barbecue or hot sauce on the side. Last night, I served these with baked sweet potatoes and a sauteed vegetable. They are also good with corn on the cob for a meal eaten with hands.
Dry Rub Drumsticks
12 chicken drumsticks
1 T salt
2 t garlic powder
2 t onion powder
1 t chipotle pepper
2 t paprika
1 t black pepper
optional – oregano or thyme
2 T olive oil
Preheat oven to 350 degrees (or heat up the grill). Rub drumsticks with a bit of oil. Combine all of the dry spices into a salt shaker. Season drumsticks liberally. Bake for 45 minutes or until cooked thoroughly. Serve with barbecue sauce to dip.

Can you do this in a crockpot? Our oven is currently out of commission and I have some leftover drumsticks to use . . .
Hi Rachel, yes I think a crockpot is doable. I would probably put a layer of carrots or onions at the bottom to catch the drippings, and cook on low for 8-9 hours.
I love simple recipes like this as well. You could throw some potatoes in the oven at the same time and you practically have a meal!

What can I use instead of chipotle Pepper?? I have a spice rack so what would be a good substitute??
I would use a combination of half smoked paprika and half cayenne pepper. If you don’t have that, you can use just the half cayenne.
