Menu Plan for Week of Feb 28, 2010

Last week, our favorite meal was the mapo tofu, a dish that I should make more often.  For this week, I picked up some pre-made Carnitas from the Latino market, so we’ll have Mexican inspired dishes.  Also breakfast for dinner on Saturday.

Breakfasts: Low sugar granola, Greek yogurt, boiled eggs
Lunches: Leftovers, sliced oranges

Dinners:
Sunday: Salmon fried rice, stir fried vegetables, fuji apples

Monday: Mexican rice bowls with sauteed spinach, agua fresca

Tuesday:
Enchilada stacks (using leftovers), Aztec vegetables, sliced pears

Wednesday:
Indian spiced chickpeas, brown rice, spicy cabbage, winter fruit salad

Thursday:
out

Friday: Ham and cabbage skillet, sweet potatoes, fruit

Saturday:
Clean the fridge frittata, spicy sweet potato wedges, green salad
