Menu Plan for Week of Feb 21, 2010

I’m trying to get back into the swing of menu planning after a busy couple of weeks.  For this week, a number of old favorites are planned. I’m also using a lot of cabbage, sweet potatoes, and apples.

Breakfasts: Healthy Banana and Oat bars, boiled eggs
Lunches: Leftovers, loaded miso soup

Dinners:
Sunday: Lentil and sausage stew, collard greens, sliced pears

Monday: Unstuffed cabbage soup, sweet potatoes, winter fruit salad

Tuesday: Leftover cabbage, pear and arugula salad

Wednesday: Ma Po Tofu, rice, steamed broccoli, sliced apples

Thursday: Thai spicy green beans, brown rice, marinated cauliflower

Friday: out

Saturday: Crockpot pinto beans, cornbread, green salad, blueberry crisp
