Menu Plan for Week of Jan 10, 2010

For last week, the favorite meal was the Indian spiced chick peas.  Spicy dishes seem to go well with sweet vegetables like sweet potatoes or butternut squash.  I will be continuing with lower meat meals and have featured pinto beans (from pantry), black beans, and lots of vegetables in the menu this week.  In addition, I am still trying to use up things from the pantry and freezer and will try to make a batch of Everything (clean the fridge) soup that I didn’t get to last week.

Breakfasts: Healthy baked oatmeal with blueberries, greek yogurt
Lunches: Leftovers, boiled eggs, fuji apples

Dinners:
Sunday: Crockpot pinto beans, collard greens, cornbread

Monday: Mexican rice bowls (w/ leftover pintos), Aztec vegetables, tomato salad

Tuesday: Sweet potato and black bean chili (made w/ grass fed beef from freezer), brown rice, steamed broccoli

Wednesday:
Easy enchiladas (w/ leftover chili filling), Aztec vegetables, apple ginger coleslaw

Thursday: out

Friday:
Everything soup, green salad, winter fruit salad

Saturday: Leftover everything soup, quesadillas (cheese from freezer), pears and yogurt dip
