Menu Plan for Week of Dec 27, 2009
Happy New Year to everyone. For New Year’s Eve, I will be preparing a steak dinner complete with chocolate fondue for dessert. New year’s day, we will have the traditional black eyed peas and collard greens for good luck.
Breakfasts: Migas, refried beans, grapefruit
Lunches: Leftovers, hummus and veggie sticks, sliced apples
Sunday: Turkey enchiladas (with leftover turkey), refried beans, Aztec vegetables
Monday: Turkey and white bean chili, sweet potatoes, apple ginger coleslaw
Tuesday: out
Wednesday: Simple tuna pasta sauce over brown rice pasta, steamed broccoli, sliced pears
Thursday: New Year’s Eve Dinner: Filet Mignon, sauteed mushrooms, green beans, pear and arugula salad, chocolate fondue and fruit
Friday: Happy New Year’s — Black eyed peas and collard greens, cornbread
Saturday: Black eyed pea and collard green stew, winter fruit salad

I grew up eating Black Eyed Peas and Cornbread for New Year’s Day dinner. My husband grew up eating Menudo.
We have different things for New Year’s Day dinner these days.
Rona, believe it or not, I have never actually tried menudo. I still love the black eyed peas though. Happy New Year.
