Super Simple Lemon Chicken

Chicken is a favorite dish of a lot of people.  I prefer relatively simple preparations of chicken, simply roasted (I’ve been using the crockpot lately), with a ginger-garlic preparation, or with a lemon-herb marinade.  This chicken is marinated (preferably overnight) and then baked in the oven. I use chicken thighs with the skin and bone on, but you can use drumsticks, a whole chicken cut up or chicken breasts, and adjust the cooking time accordingly. I like to serve this with brown rice and a green vegetable like lightly sauteed sugar snap peas.

Super Simple Lemon Chicken

2 pounds chicken thighs
5 T fresh lemon juice
zest from one lemon
2 T olive oil
2 cloves garlic, minced
1/2 t dried herb (either thyme, rosemary, or oregano)
salt and black pepper

In a ziploc bag, add the marinade ingredients and mix, add chicken pieces.  Marinade in the refrigerator 4-24 hours.  Preheat oven to 350 degrees. Remove chicken from marinade and place in a roasting pan, do not crowd the pieces.  Bake about 45 minutes until cooked all the way through and browned.  You can also grill the chicken.

Hi Lynne,

In the past year, the biggest change in my cooking has been to strip out a lot of (unnecessary ) ingredients. I find this simpler version lets the lemon (which I love) shine through. Merry Christmas.

Made this for dinner tonight and am ditching my old recipe. This was so simple and tasty. Like you, I prefer less ingredients. I got just as much flavour from your recipe as from my old recipe which has at least twice as many. And I could taste the individual flavours too.
