Menu Plan for Week of Dec 20, 2009

Oh my, how did Christmas approach so rapidly!  For Christmas dinner, I am making a roast turkey breast.  Turkey is okay, but turkey leftovers are great.  I look forward to the leftovers in the days after.  I am also serving chocolate fondue for dessert with poundcake squares and fresh fruit for dipping (yum)!

Breakfasts: Pancakes w/ blueberry syrup, scrambled eggs, grapefruit
Lunches: Leftovers, roasted vegetable soup, sliced pears

Sunday:
Lentil and sausage stew, collard greens, sliced apples

Monday: Leftover lentil stew, brown rice, green salad, winter fruit salad

Tuesday:
Super simple fish, sweet and sour cabbage, baked sweet potatoes

Wed-Thursday:
Out

Friday: Merry Christmas! Roasted turkey breast, healthy mashed potatotes, roasted brussels sprouts, pear and arugula salad, chocolate fondue and fruit

Saturday:
Turkey summer rolls, roasted vegetable soup, winter fruit salad

You have a delicious menu planned!
I’m so glad that my husband isn’t working on Christmas Eve and Christmas. He really needs the days off.

That sounds delicious!
We are forecast a hot Christmas Day here in New Zealand, so it will be a not-too-heavy meal for us.
I am making Chicken Waldorf salad, and serving it with buttered baby potatoes and baby beets, and then trifle for dessert and fruit mince pies for nibbles later if anyone is still hungry.
