Menu Plan for Week of Dec 13, 2009

From last week’s menu, we really enjoyed the sweet potato and black bean chili.  The contrast between the savory turkey and beans and the sweet potatoes is really good.  This is my new, go to chili recipe.  For this week, you will see some repeats from previous. If you use a gluten-free cornbread mix on Tuesday, this menu should be entirely gluten-free.

Breakfasts: Baked oatmeal with cranberries, boiled eggs
Lunches: Leftovers, hummus, vegetable sticks, sliced apples

Sunday: Salmon fried rice, stir-fried vegetables, sliced pears

Monday: Salmon chili, baked sweet potatoes, green salad

Tuesday: Swiss chard and white bean stew, cornbread, winter fruit salad

Wednesday: Indian spiced chickpeas, sauteed spinach, rice, yogurt raita

Thursday-Friday: out

Saturday: Simple tuna pasta with brown rice pasta, steamed broccoli, apple ginger coleslaw
