Menu Plan for Week of Dec 6, 2009

Phew, last week ended up being ridiculously busy and a couple of things came off the menu and a there was an extra dinner out.  Our favorite dish from last week was the speedy red beans and rice.  I now prefer this version to the slow cooked version made from dried red beans (heresy, I know).  I think the fresher vegetables and rice stirred in, plus lots of spicy turkey andouille sausage make it great.  For this week, I carried over a number of dishes and feature the sweet potato and black bean chili which is one of my husband’s favorites.  I usually make enough for 3 meals and we  can have leftovers and lunches later.

Breakfasts: Oatmeal breakfast bowls, boiled eggs
Lunches: Leftovers, roast chickpeas, sliced pears

Sunday:
Ham and cabbage skillet (w/ turkey sausage), baked sweet potatoes, pear and arugula salad (didn’t have this last week)

Monday: Sweet potato and black bean chili, brown rice, green salad

Tuesday: Leftover chili and rice, winter fruit salad

Wednesday:
Mexican rice bowls w/ Aztec vegetables, guacamole and tomato salad

Thursday-Friday: out

Saturday: Salmon potato cakes, steamed broccoli, chipotle sweet potatoes

My husband and I eat beans. I remember eating them while growing up. I make mine with less fat.
