Healthy Nibbles for Guests
Snacks are one of the things that can really cause my healthy eating habits to be de-railed. While I tend to eat fairly healthily at meals, it’s the late afternoon or late evening munchies where I tend to root around for chips, cookies, or other snack like things. During the holiday season, I will often have friends drop by for a quick visit, tea, and a glass of wine. I like to provide tasty treats to demonstrate that healthy nibbles can still be delicious. I like to serve dips, such as chipotle hummus or guacamole with vegetable sticks. Here are some other favorites:
Spicy Roasted Chickpeas
1 can (16 oz.) chickpeas, rinsed and drained
1 T olive oil
salt
cayenne pepper (or ground chipotle pepper)
Preheat oven to 350 degrees. In a bowl, toss the drained chickpeas with olive oil, salt and cayenne pepper to taste. I like mine spicy and use quite a bit of cayenee. Roast in oven for about 40 minutes until browned and crispy on the outside, stirring once or twice during baking time. Let cool slightly before eating so the exterior becomes crunchy. Best served hot.
Fruit Dip
1 cup plain yogurt (Greek style)
2-3 t honey
1 t grated lime zest
squeeze lime juice
Stir all ingredients together and adjust sweetener to taste. Serve with apple slices or fruit kabobs.

I’ve always wanted to try those chickpeas, I just need to go out and buy everything. They’d make a healthy snack for us.
Lisa, the more I tinker with recipes, the fewer ingredients I tend to use. This seems to really help bring out the flavor of the main ingredient.
