Menu Plan for the Week of Nov 8, 2009

For the first time in a while, a non-spicy dish was the favorite, and surprise, surprise, it was the crockpot lima beans.  I fixed these in a simplest way possible cooked with a ham hock, and onions, I’m not even sure a recipe is called for.  For this week, the wild salmon looked particularly fresh, so I picked up 2 small filets.  In addition, I’ve been trying to add more beans to our diet.  Of the legumes, lentils are hubby’s absolute favorite.  I’ll post the recipe for lentil stew tomorrow.  In addition, with summery peaches and strawberries a distant memory, I’m incorporating the seasonal fruits like apple and pear together with frozen fruits like blueberries

Breakfasts: Low sugar granola, Greek yogurt w/ frozen blueberries
Lunches: Leftovers, lentil soup, fuji apples

Sunday: Lentil stew, cornbread, pear and arugula salad

Monday: 10-minute fish, mint roasted potatoes, steamed broccoli, winter fruit salad

Tuesday: Lentil and collard green stew (adapted recipe), brown rice, sliced pears

Wed-Thurs: out

Friday: Simple tuna pasta sauce w/ brown rice pasta, apple ginger coleslaw

Saturday: Indonesian spicy rice w/ egg, bok choy, ambrosia

Thank you for sharing the Lima Bean recipe. We receive lima beans in our Angel Food Ministries order and it’s good to see other ways to prepare them.
You have a delicious meal plan.
