Menu Plan for Week of October 18, 2009

Last week, our favorite dish was the Mexican chicken soup.  It’s so much more flavorful than regular chicken soup, and I really like the final addition of cilantro and avocado.  For this coming week, I’ll be tied up several days and out of the kitchen; but for the other days, some reliable recipes come in handy.

Breakfasts: Blueberry baked oatmeal, boiled eggs
Lunches: leftovers, hummus and vegetables, sliced apples

Dinners:

Sunday: Crockpot pork tenderloin, cabbage, healthy mashed potatoes

Monday: Indonesian spicy rice (w/ leftover pork), Chinese vegetables, pears

Tuesday: Mexican rice bowls (w/ leftover rice and pork), Aztec vegetables, sliced avocado

Wednesday-Friday: out

Saturday: Chicken chili, baked sweet potatoes, apple ginger coleslaw

Looks like your family is going to have some delicious meals.
I checked out your Mexican Rice Bowl recipe. I’ll have to share it with the hubby and teen. I think they would enjoy having this for dinner.

Julie, Rona, let us know what you think if you try out the recipes. The oatmeal and rice bowls are two regular favorites.
