Menu Plan for Week of October 4, 2009
I’m continuing with the low glycemic way of eating which is becoming easier. Of course, the favorite last week was the spicy dish: Mexican rice bowls which are super simple and seem much tastier than the version at a couple of the chain restaurants. For this week, I will be busy in the middle part of the week in lots of meetings. Hopefully the healthy eating isn’t sacrificed. Pears and apples are also terrific right now.
Breakfasts: Banana and oat bars, boiled eggs, berries
Lunches: Leftovers, chipotle hummus and vegetable sticks
Dinners:
Sunday: Sweet potato and black bean chili, brown rice, apple-ginger coleslaw
Monday: Mexican rice bowls, Aztec vegetables, tomato salad
Tuesday: Veggie burgers, sweet potato oven fries, pear and arugula salad
Wed & Thurs: out
Friday: Clean out the fridge soup (didn’t get to this last week), salad, pear slices
Saturday: Crockpot pork tenderloin (will post recipe later), sauteed cabbage, white beans
