Menu Plan for Week of Sept 27, 2009

The low carb eating and shredding has gone well.  Thus far, I haven’t been tempted to cheat and have exercised each day.  I’ll post separately on this later.  Last week, we really enjoyed the Thai spicy green beans that I made with ground turkey.  For this week, I am bringing back some of our favorite foods and will be having small portions of the rice.  Apples are getting tastier, so I’m switching the fruit salad toward the winter fruit salad that takes advantage of tasty apples and pears.  The entire menu should be gluten-free.

Breakfasts: Oatmeal bowls, boiled eggs, berries
Lunches: Leftovers, veggie sticks, apples

Dinners:
Sunday: Thai red curry w/ chicken, sauteed spinach, brown rice, sliced pears

Monday: Quick black bean soup, collard greens, winter fruit salad

Tuesday
: Mexican rice bowls w/ Aztec vegetables, tomato and avocado salad

Wednesday: Spicy stir fry w/ chicken, brown rice, apple ginger coleslaw

Thursday:
out

Friday: Clean out the fridge soup, orange coleslaw

Saturday:
Salmon potato cakes, steamed broccoli, tomato salad

Your curry recipe looks good. I’m all about roasting a chicken and finding recipes for leftovers. I’d never made a curry before two weeks ago, and that recipe was a flop. Yours looks like it would be much more flavorful; I’ll have to give it a try. Wish me luck! ;)

Curry is great fun. I’ve had much better success with the curry pastes rather than powders. In addition when making Thai curry, I do not add any water or chicken stock, just the coconut milk to make it extra creamy. Finally, Thai is about balancing the various tastes, sweet, savory, hot, etc…. so aim for a balance among soy/fish sauce, sugar, and the hot curry paste. Best of luck and keep us posted!
