Menu Plan for September 13, 2009

Last week, we really enjoyed the enchilada stacks, which is all too predictable given that we love Mexican food and anything spicy.  After several weeks (okay, may be more like a couple of months) of eating foods that I know are not particularly good for me (ice cream, late night chips, pizza, etc…) I stepped on the scale and noticed that I had put on a few pounds.  Even worse than the few pounds is that I have been feeling lethargic and wanting to take a nap every afternoon, and increasingly craving sweets.  I blame over-reading of food blogs!  So, for the next couple of weeks, I plan to shift the eating a bit more low-carb, (somewhat similar to South Beach Phase 2), emphasizing a lot of vegetables and healthy protein.  For the meals below with brown rice, I will limit the serving of rice for my portion (hubby seems to be lean and trim despite sharing most of the eating). This morning I stocked up on vegetables for raw vegetable sticks and managed not to buy any chips or chocolate.  Time to get back to shredding as well.

Breakfasts: Low sugar granola and greek yogurt, boiled eggs, berries
Lunches: Leftovers, chipotle hummus and vegetable sticks

Dinners:
Sunday:
Red beans and rice, collard greens, sliced pears

Monday: Chickpeas and ground turkey, Aztec vegetables, orange coleslaw

Tuesday: Unstuffed cabbage, brown rice, cucumber salad, summer fruit salad

Wednesday: Turkey Meatballs, faux mashed potatoes (cauliflower), sauteed spinach

Thursday: out

Friday: Quick black bean soup, super simple fish, steamed broccoli, green salad

Saturday: Thai red curry w/ chicken, brown rice, bok choy, nectarine slices
