Menu Plan for September 6, 2009
Last week, I had a lot of fun making popsicles with the cantaloupe that was on sale, adding ginger for extra flavor punch. In addition, we really liked the clean your freezer soup that I made in the crockpot with the addition of lentils and barley. I’ll post the recipe tomorrow. Here’s what I’m planning for this week, this menu should be entirely gluten free:
Breakfasts: Healthy baked oatmeal (blueberry/walnut), boiled eggs, berries
Lunches: Leftovers, green smoothies
Dinners:
Sunday: Leftover everything soup (lentil and tomato), broccoli salad, cantaloupe popsicles
Monday: Labor Day: Carnitas, corn tortillas, Aztec vegetables, peach and tomato salad
Tuesday: Mexican rice bowls with leftover carnitas, spinach, strawberry yogurt popsicles
Wednesday: Quick tuna pasta w/ brown rice penne, steamed green beans, green salad
Thursday: out
Friday: Enchilada stacks w/ leftover tortillas, Aztec vegetables, agua fresca
Saturday: Fish tacos, 3-bean salad, apple ginger coleslaw

The Aztec vegetables sounds great. Just what I need to use up some zucchini and peppers. The Enchilada stacks sound yummy, too.
