Frugal and Healthy Frozen Desserts
Oh my is it hot, today. Must have been in the mid 90s. On days like this I tend to crave cold things and frozen desserts. One really tasty way to have healthy desserts is to incorporate more fruit in the form of fruit popsicles. I like to make popsicles that are almost entirely fruit (little to no water added) and with no added sugar. If you have only tried store made popsicles that are really sugared water and food coloring, you’re in for a treat. The blended fruit snacks are intensely flavored. This is a great way to buy frugal bulk amounts of fruit (like the last hour of a farmer’s market) and to serve melon when it’s on sale. It’s also a great way to use up fruit that needs to be eaten right away. The super ripeness just adds to the yummy flavors.
Cantaloupe popsicles
2 cups cantaloupe, cut into large chunks
1 T fresh lime juice
to make it extra tasty add one of the following:
1/2 teaspoon grated lime or lemon rind (optional)
OR
1/2 teaspoon grated fresh ginger (optional)
OR
1/2 teaspoon chopped fresh mint (optional)
In a blender or food processor, blend cantaloupe, lime juice and optional choice of flavoring until fairly smooth. Pour into popsicle molds or small glass containers. If using containers, cover with foil and insert sticks through the foil to hold in place. Freeze until firm (best if overnight).
Berry-yogurt popsicles
1 cup ripe berries, stem if using strawberries
1 cup yogurt
Combine berries and yogurt in a blender or food processor and blend until fairly smooth. Pour into molds and freeze until firm. (I use full fat plain yogurt since I like tart tastes, you can use a flavored yogurt that is sweetened).

Do you have popsicle molds that you love? I’m looking for some good ones.
FishMama, I used to have some cute ones that unmolded really easily, but I must confess the last few rounds, I’ve made these in ice cube trays, putting a piece of plastic wrap to secure the sticks. You might try e-Bay for some fun kid-themed molds.
