Menu Plan for Week of August 30, 2009
Last week’s favorites were the enchilada stacks and Aztec vegetables. I was impressed that we finished a couple of pounds of zucchini through the Aztec vegetable recipe. For this week, a lot of rice recipes are on offer. On Saturday, I plan to take the contents of the freezer bag where I accumulate bits and pieces of leftovers and make a pot of soup. If it turns out well, I’ll post a recipe soon. This menu should be entirely gluten-free.
Breakfasts: Healthy granola, Greek yogurt, fruit
Lunches: Leftovers, chipotle hummus and vegetable sticks
Dinners:
Sunday: Speedy red beans and rice, collard greens, strawberry sorbet
Monday: Chickpeas w/ turkey, brown rice, sauteed spinach, fruit salad
Tuesday: Brown rice pasta w/ turkey meatballs, green bean salad, green salad
Wednesday: Indonesian spicy rice w/ egg, Chinese vegetables, fruit salad
Thursday: out
Friday: Thai red curry w/ broccoli and zucchini, brown rice, cucumber salad
Saturday: Everything soup (using the bag of freezer odds and ends), orange coleslaw, fruit

Becca, I only fix brown rice at home now. It seems so much tastier to me than white rice.
