		<description>Hi Andy, some great suggestions.  Interestingly, when I was looking at this week&#039;s menu, my first thought is that it seems awfully vegan.  And although I enjoy eating and preparing vegan dishes, it is a bit odd to have more than 1-2 nights as relatively vegan.  Ah well, we are omnivores, and I think last week might have been a meat heavy week where I had picked up some carnitas at the store to serve in soft tacos.  

I definitely eat a lot of eggs, continued to eat them even when people thought they were bad for you, still eat them as they are coming back into vogue.  In addition to boiled eggs and deviled eggs, I make fritattas and egg scrambles w/ leftovers all the time.  I plan to post some more egg recipes soon.

1) Eggs. I know you have them under &quot;sandwich alternatives&quot;, but don&#039;t forget about them. Your diet is not too strong on the protein side, because the protein in chickpeas and grains is not complete. Eggs have top-quality whole protein. On the other hand, recent research has found that their cholesterol content is not too serious, because most of our cholesterol is made by our bodies, so exercise and a low-fat diet are more important for having a low level of it, than diminishing its intake. I would use even more eggs in your kind of diet.

2) An idea for tasty and healthy fish: prepare a bechamel (white) sauce, but sauteing onions with the butter first (removing the onions before mixing with the flour), adding some mustard while cooking, and finishing the cooking of the fish in this sauce. It tastes somewhat like cream, but with much less fat, and it has milk.

3) An idea for dips: mixing a bit of blue cheese and chopped pasley into low-fat cream cheese (try different brands/flavors).
