Menu Plan for the Week of August 9, 2009

Last week, I was fairly busy with an unexpected offsite meeting, and lots of conference calls.  Fortunately, I had some standby meal ideas at hand and we had some quick fix meals.  The wild salmon with pineapple salsa was fantastic.  I’ll post the simple salmon recipe shortly.  This week, it looks like the weather is going into the 90s again.  We’ll have salads and Mexican food!  I also picked up an enormous cantaloupe if anyone has any creative ideas for fresh melon.

Breakfasts: Healthy baked oatmeal (blueberry & pecan), boiled eggs, strawberries
Lunches: Chipotle hummus w/ veggies, salads, cantaloupe

Dinners:
Sunday: Mexican rice bowls w/ ground turkey & spinach & black beans, watermelon and feta salad

Monday:
Easy enchiladas w/ ground turkey, refried beans, Mexican ratatouille

Tuesday: Leftover enchiladas, avocado and tomato salad, corn and zucchini saute

Wednesday:
Thai spicy green beans, brown rice, apple ginger coleslaw

Thursday: out

Friday: Red curry vegetables, brown rice, summer fruit salad

Saturday: Deconstructed tuna salads w/ potato and broccoli, peach and tomato salad
