Menu Plan for Week of August 2, 2009

Last week, we had guests over for dinner a couple of nights.  I don’t radically change the food when guests show up, but instead will select from the menu rotation meals that have been well received in the past.  This past week, the speedy red beans and rice was well received as was the strawberry and mixed greens salad.  I think both sets of guests appreciated that I served a lot of fresh vegetables and fresh fruit.

Breakfasts: Gluten free pancakes w/ blueberry syrup, scrambled eggs
Lunches: Green smoothies, leftovers

Dinners:

Sunday: Swiss chard and white bean stew, watermelon

Monday: Wild salmon w/ pineapple salsa, steamed broccoli, fruit salad

Tuesday: Tofu spicy stir fry, brown rice, orange coleslaw

Wednesday: Feijoada (stewed black beans w/ chicken sausage), Brazilian collards, brown rice

Thursday:
out

Friday:
Leftover Feijoada, sauteed spinach, peach and tomato salad

Saturday: Thai shrimp and vegetable red curry, rice, cucumber salad
