Menu Plan for Week of July 26, 2009
Last week’s favorite was the Mexican chicken soup which was spicy and flavorful with chipotle chili powder. I also really liked the peach and tomato salad and will make it again this week, perhaps with basil instead of cilantro. For this week, I am trying to serve fish more often. There was a recent study indicating that fish eating is correlated with lower rates of dementia. Everytime I see a recommendation like that, it influences my menu for at least a week:).
Breakfasts: Healthy granola, greek yogurt, strawberries
Lunches: Leftovers, fruit
Dinners:
Sunday: Salmon cakes, brown rice, broccoli and tomato salad, fruit and greens
Monday: Speedy red beans and rice, greens, peach and tomato salad
Tuesday: Indonesian spicy rice w/ egg, stir fried veggies, summer fruit salad
Wednesday: Grilled fresh tuna steaks, corn & black bean salad, grilled peaches
Thursday: out
Friday: Deconstructed tuna salads, grilled pineapple
Saturday: Spinach frittata, mint roasted potatoes, fruit salad

I am going to try to make frittata tonight to have for breakfast the next few mornings. Is it pretty easy?
Hi Becca, this recipe is super easy and quite forgiving, you can add different leftovers instead of spinach and artichoke. The pour and bake method skips the stovetop step.
