Peach and Chicken Salad
If you haven’t figured out already, I love peaches. Actually, I love a lot of summer fruit, but this year, the peaches and nectarines are especially good. When fresh produce is abundant, and it’s very hot outside, I like to serve a lot of salads in innovative new ways. One of my favorite ways to serve main dish salads is to combine sweet and savory tastes. This dish combines chicken (great for marinated, grilled chicken) together with crisp salad greens, juicy peaches, and a light dressing that helps to bring out the flavors. If you have leftover chicken, you don’t even need to heat up the kitchen.
Peach and Chicken Salad
makes about 2 main dish servings
1 breast of cooked chicken, seasoned and sliced
4 cups of mixed salad greens
1 small cucumber, thinly sliced
1/2 cup shredded carrot
1/4 red onion, thinly sliced
1/4 cup purple cabbage, shredded
2 ripe peaches, pitted and sliced
dressing:
2 t honey
1 T lemon juice
2 T orange juice
1 t mustard
pinch of salt
2 T olive oil
In a small bowl, whisk the dressing ingredients together to combine. On 2 serving plates,place a mound of salad greens, and sprinkle on the other vegetables. Scatter chicken and peach slices evenly over each plate. Add dressing just before serving.
