Menu Plan for Week of July 19, 2009

The heat of last week seems to have dissipated, so I’m turning back to meals that require a bit more cooking.  Last week, red beans and rice was the standout of the week, we really liked the spicy dish, and I especially like the speed at which it comes together and tastes as if it has simmered for a long time, despite using canned beans.  This week, I picked up an organic chicken which I’ll roast (in the crockpot) today and use leftover chicken for meals and stock throughout the week.  You can read more about this planning in almost meatless meals where I talk about incorporating small amounts of meat to enhance, rather than be the center, of dinner.  Finally, I’ve been itching to try crockpot felafels ever since I read about the possibility.  If they turn out well, I’ll post about them later.

Breakfasts: Healthy oat and banana bars, greek yogurt, strawberries
Lunches: Leftovers, fruit

Dinners:

Sunday: Roast chicken, roasted carrots, polenta, broccoli salad

Monday:
Thai chicken salad, fruit over greens

Tuesday: Indonesian spicy rice w/ chicken, stir fried veggies, summer fruit salad

Wednesday: Mexican chicken soup w/ zucchini and green beans, brown rice, apple ginger coleslaw

Thursday:
out

Friday: Crockpot felafels w/ tortillas and yogurt sauce, peach and tomato salad

Saturday: Enchiladas (leftover chicken or blackbean), Mexican veggies, agua fresca

I can’t wait to hear about the crockpot felafels. I have never made them any way before!

I love falafels, but I’ve never made them. I either buy them out of eat them from a specific caterer.

Hi Audrey, I’ve never made them either. I have been searching for a non-deep-fried version of felafels. Will keep everyone posted.
