Super Simple Fish

I have been trying to find ways to increase fish in our diet given all of the health benefits of fish.  Interestingly, as a kid, I never liked fish (except the occasional canned tuna as a treat) but I now find that preparing fish in different ways can be quite fun.  This is a recipe that I concocted one time when we had guests over who were quite tired and asked if we could just stay in for dinner.  Since I had fresh tilapia in the fridge, and nothing else planned, I thought baked tilapia sounded good. This recipe doesn’t require breading and getting a whole series of other pans dirty.  You can use any light tasting white fish, and adjust the cooking time if the filets are thicker.  In winter I like to serve this with rice pilaf and a steamed vegetable, like steamed broccoli.  In summer, I would serve this with corn on the cob and a fresh salad like apple ginger coleslaw or peach and tomato salad:

Super Simple Tilapia

4-5 tilapia filets
2 T mayonnaise
2 t mustard
few shakes of tobasco
2 oz. sliced toasted almonds

Preheat the oven to 400 degrees F.  Place tilapia filets on a baking sheet that has been sprayed with cooking spray.  In a small bowl, combine mayonnaise, mustard, and tobasco.  Spread about a teaspoon to teaspoon and a half of the sauce evenly over each tilapia filet.  Sprinkle sliced almonds over the filets (just a light scattering).  Bake the tilapia until cooked through and the almonds are lightly browned, about 12 minutes.
