Menu Plan for Week of July 12, 2009

This looks like another busy week with travelling, meetings, and some leftovers to munch on.  Fortunately, we are still in the height of summer vegetables and fruit season with strawberries and peaches still ripe and tasty.

Breakfasts: Migas w/ refried beans, berries w/ greek yogurt
Lunches: Leftovers, peaches

Dinners:
Sunday: Pad Thai w/ shrimp, steamed broccoli, peach and tomato salad

Monday: Thai chicken salad over romaine, summer fruit salad

Tuesday: Lentils from freezer, brown rice, balsamic berries over frozen yogurt

Wednesday:
Salmon and potato cakes, fresh corn, fruit and greens salad

Thursday: Deconstructed tuna salads, broccoli and tomato salad, grilled fruit

Friday: Vegetarian spicy stir fry (w/ tofu), brown rice, strawberry sorbets

Saturday: Simple red beans and rice, collard greens, melon
