Menu Plan for Week of June 28, 2009
Last week was extremely busy with travel and meetings, so I had a truncated menu, but by far the favorite were the Mexican rice bowls. This upcoming week will be similar. The weather is getting warmer, meaning more salads and fresh foods as well as foods that are great served at room temperature or chilled. The strawberries and peaches look great this week. I am also looking for more fruit based dessert suggestions that don’t use added sugar. This menu should be entirely gluten free.
Breakfasts: Healthy banana and oat bars (w/ dried cherries), boiled eggs, strawberries
Lunches: Leftovers, salads, peaches
Dinners:
Sunday: Leftover roast beef, peach and tomato salad, green beans
Monday: Deconstructed tuna salads, apple ginger coleslaw, sorbet
Tuesday: Indonesian spicy rice, stir fried veggies, strawberries
Wednesday: Grilled chicken breast w/ pineapple salsa, broccoli and tomato salad, grilled fruit
Thursday-Friday: out
Saturday: Thai chicken salad (bringing to a potluck)

Dddiva, I have a slightly different approach to having a mostly gluten and casein free diet. Rather than re-creating familiar dishes with gluten free flours and milk substitutes, I try to create tasty meals with naturally GF and CF foods. This leads to more vegetables, fruits that are seasonal. Check out the gluten free menu swap as well for other ideas.
