Menu Plan for Week of June 14, 2009

Last week, we really enjoyed the fish tacos and red beans and rice.  This week, I picked up some ground turkey and we’ll try it in some of the international dishes including an Indian-style dish that I have eaten in people’s homes, so maybe the spice mixture will not be too difficult.  I use a little over a pound of ground turkey in 3-4 meals, reducing the meat content, and adding vegetables or beans. You can read more about that strategy in a previous post, Almost Meatless Meals. The stone fruit (white peaches and nectarines) are also arriving at the farmer’s market, yum! The menu should be entirely gluten-free.
Breakfasts: Migas & refried beans, nectarines, yogurt
Lunches: Leftovers, salads, green smoothies

Dinners:
Sunday: Thai spicy turkey and green beans, steamed broccoli, brown rice

Monday: Mexican rice bowls w/ ground turkey and brown rice, tomato & avocado salad, agua fresca

Tuesday: Indonesian spicy rice w/ egg, stir fried veggies, ambrosia

Wednesday: Baked beans, brussels sprouts, orange coleslaw

Thursday: out

Friday: Keema (Indian spiced ground turkey, potatoes, peas) raita, sauteed spinach, strawberry sorbet

Saturday: Tuna nicoise salads, fruit salad
