Menu Plan for Week of June 7, 2009
Last week, we loved the crab enchiladas (so much tastier than chicken) and the lentil and greens soup. The soup was such a large batch that I put half away in the freezer. This week, I’m trying to get into the swing of summer produce with lots of corn, zucchini, tomatoes, and fresh basil. I’m also trying to add more fish to our diet. Except for the veggie burgers, the menu is gluten free.
Breakfasts: Low sugar granola, green yogurt, berries
Lunches: Leftovers, salads, green smoothies
Dinners:
Sunday: Fish tacos, avocado, tomato, cabbage and white sauce, corn and black bean salad
Monday: Simple tuna pasta w/ brown rice pasta, steamed broccoli, fruit salad
Tuesday: Speedy red beans and rice, collard greens, cherry tomato salad
Wednesday: Cod, fresh corn, zucchini and peppers; apple ginger coleslaw
Thursday: out
Friday: Pineapple fried rice, stir fried Chinese veggies, ambrosia
Saturday: Veggie burgers, spinach and chickpeas, cherry tomato and basil salad
