Menu Plan for Week of May 31, 2009

Last week, I finally tried a crockpot version of taco soup, which I had been reading about from various sources.  We liked the version that I made that had more veggies and homemade spice mix.  I didn’t get to several menu items last week due to last minute busy-ness, so I’ve moved them forward.  For this week, I’m making the crab enchiladas again, which were a big hit.  In addition, early strawberries and artichokes are in season, yum. This menu should be entirely gluten free.

Breakfasts: Healthy banana & oat bars (w/ cranberries), fresh berries, yogurt
Lunches: Leftovers, Salad, green smoothies, boiled eggs

Dinners
Sunday: Lentils w/ tomatoes, collard greens, ambrosia

Monday: Crab enchiladas, refried beans, fruit and greens salad, agua fresca

Tuesday: Crab pad thai, bok choy, apple ginger coleslaw

Wednesday: Lentil and greens soup (from leftovers), brown rice, fruit salad

Thursday: out

Friday:
Fresh artichokes, spinach frittata, green salad, grilled fruit

Saturday: Indonesian spicy rice, stir fried Chinese veggies, fruit salad
