Menu Plan for Week of May 17, 2009

Last week’s favorites were the Mexican rice bowls (mock Chipotle bowls), followed closely by the red beans and rice.  I think we like spicy foods a lot.  In fact, we liked the Mexican rice bowls so much I put it on the menu again this week, but with seasoned ground turkey instead of grilled chicken breast.  It’s turned a lot hotter here this weekend, so I’m looking more toward main dish salads and fresh fruit.

Breakfasts:
Migas w/ refried beans, fruit, granola and greek yogurt
Lunches: Green smoothies, leftovers, green salads

Dinners

Sunday: Spicy Stir Fry w/ Shrimp and Chinese Veggies, rice, fruit salad

Monday: Spicy shrimp w/ goat cheese, brown rice, steamed broccoli, leftover fruit salad

Tuesday: Taco salads w/ black beans, tomatoes, avocado and cilantro; ambrosia

Wednesday: Burrito bowls w/ ground turkey, spinach, black beans, tomato and avocado salad; agua fresca

Thursday:
Out

Friday: Pad Thai w/ shrimp, bok choy, apple ginger coleslaw

Saturday: Tuna nicoise salads w/ potatoes and green beans, strawberry sorbet

Must try the rice bowls, we love spicy food also, and red beans are on our menu at least twice a month.

Hi Elizabeth. My kids could live on the Mexican rice bowls and they use up all the leftover bits of grilled chicken or steak and leftover beans. It’s such a quick, easy, satisfying meal for them to make for themselves. A real life-saver. They are a weekly staple for lunches and on weekends. As always , love your mix of ethnic cuisines, flavors and easy prep.

WendyGK, my husband could live on the Mexican rice bowls as well. In fact, he wonders why I experiment on so many different dishes when I have a series of meals that I know he loves. Thanks for the comment. I am experimenting with different simplified Asian versions of the rice bowl. Will post in a future menu.
