Menu Plan for Week of May 3, 2009
Lots of exciting things going on in the Modern Gal kitchen. In celebration of the blog’s 100th post, I’m asking for input on the types of recipes, blog posts, and content you would like to see going forward. Last week, due to lots of meetings and conference calls, the menu was changed up a bit. Fortunately, with a reasonably well-stocked pantry and quick fix dishes, we still had all of the planned meals at home, so I moved some of the meals to this week. But, the ginger chicken got good reviews.At the market today, they had crab available, so I’m going to try making crab enchiladas and gluten-free crab cakes, modifying the recipes for easy chicken enchiladas and salmon cakes that are tried and true recipes. Since spicy food tends to get the top reviews both at our dining table and in the comments, I’m also re-testing some of my Thai recipes.
Breakfast: Healthy baked oatmeal, boiled eggs, fruit
Lunches: Leftovers, green smoothies, apples
Dinners:
Sunday: Thai spicy ground turkey and green beans, roasted broccoli, rice
Monday: Baked beans, brussels sprouts, orange coleslaw
Tuesday: Easy crab enchiladas, refried beans, tomato/avocado salad, banana-strawberry sorbets
Wednesday: Crab cakes, chipotle sweet potatoes, sauteed spinach, fruit salad
Thursday: Out
Friday: Indonesian spicy rice w/ egg, garlic bok choy, fruit and greens salad
Saturday: Cabbage and white bean stew using cabbage instead of chard, brown rice, fruit salad
