Menu Plan for Week of April 26, 2009

For those who were wondering, the only links that I have on the recipes are links to my own recipes, that I have adapted and tested and that I serve to my family and guests.  One of the reasons that the recipes are sometimes slow to roll out is that I want to try a new variation before posting.  If you’re interested in my philosophy and approach, you might check out the summary of My Modern Frugal Kitchen.  From last week, the favorite meals were the red beans and rice served with collard greens.  Both my husband and I liked the sweet potato and black bean enchiladas, although I must confess that I prefer chicken enchiladas more, so those are on the menu this week to use up the corn tortillas.  I will be making ginger chicken tonight and posting the recipe tomorrow.

Breakfast: Scrambled tofu, green smoothies, fruit
Lunches: Leftovers, hummus and veggie sticks, apples

Dinners:
Sunday: Quick garlic-ginger chicken, brown rice, bok choy, orange coleslaw

Monday: Leftover pinto beans, collard greens, brown rice, apple ginger coleslaw

Tuesday: Chicken enchiladas, refried beans, sauteed squash, fruit salad

Wednesday: Leftover ginger chicken, corn and blackbean salad, sauteed spinach

Thursday
: out

Friday
: Baked beans, brussels sprouts, fruit salad

Saturday
: Salmon and potato cakes, chipotle sweet potatoes, steamed broccoli

Hi Elizabeth,
that looks delicious! I’ve never thought to add ginger to coleslaw. BTW, the corn and blackbean salad is taking me to the ‘top posts’ page.

Hi Cheryl, try the fresh ginger just once, it is the key secret ingredient in the dish.
