Menu Plan for Week of April 19, 2009

Last week, the favorites were the healthy baked oatmeal made with lots of blueberries, dried cranberries, and extra chopped walnuts, it disappeared fast.  In addition, we really liked the Senate bean soup that I made in a crockpot and finished with a hand blender.  Because the ham steak seemed quite salty, I ended up making swiss chard and white bean stew with tomatoes and garnished it with a small amount of chopped ham rather than serving ham steak fried up.  This week, we’re emphasizing spicy foods, with red beans and rice tonight (recipe tomorrow) and I’m going to try a vegetarian version of the enchiladas later this week using black beans and sweet pototato as the filling.

Breakfasts: Healthy banana & oat bars, green smoothies, kefir
Lunch: Leftovers, loaded miso soup, apples

Dinners:
Sunday: Speedy red beans and rice, collard greens, fruit salad

Monday: Shrimp with tomatoes and goat cheese, brown rice, broccoli

Tuesday:
Vegetarian burgers (not gluten free), green beans, chipotle sweet potatoes

Wednesday: Spicy shrimp and bok choy stirfry, brown rice, orange coleslaw

Thursday: out

Friday: Easy enchiladas (w/ sweet potatoes and black beans), Mexican salad, agua fresca

Saturday: Pinto beans in crockpot, cornbread, big salad, fruit salad

Hi Rita, Hi Michelle, I do try to cook healthy, but I’ve found if no one will eat it, the great vitamins and nutrients don’t matter much. So, I’ve been trying to focus on healthy things with lots of taste. Thanks so much for visiting.
