Menu Plan for Week of April 12, 2009

Happy Easter (or Passover or gorgeous spring day) to everyone.  The favorite items last week were the yellow split pea soup and spicy stir-fry that I made with shrimp, napa cabbage, and broccoli. One of the hubby’s favorite foods is ham, so I looked for a small ham at the market.  Since I didn’t wish to purchase 15 lbs of ham (the smallest quarter ham at the store), I decided to pickup a petite Niman Ranch hamsteak that will last for 2-3 meals.  We are also enjoying the asparagus which seems quite good this year.

Breakfast:
Healthy baked oatmeal (with extra blueberries and no apples), boiled eggs, smoothies
Lunch: Leftovers, hummus, raw vegetable sticks, fruit

Dinners:
Sunday: Ham w/ pineapple salsa, asparagus, chipotle sweet potatoes, strawberry-banana sorbet

Monday: Ham, sweet and sour swiss chard, rice, salad

Tuesday: Riblets (not gluten free), spinach and chickpeas, sweet potatoes, fruit salad

Wednesday: Indonesian spicy rice w/ leftover ham, stir-fried Chinese vegetables, orange coleslaw

Thursday: out

Friday: Spinach and artichoke frittata, spicy sweet potato wedges, broccoli salad

Saturday:
Senate bean soup made with white beans, salad

Yummy!!! I wanna come to your house for lunch! If you happen to have tried the indonesian spicy rice before, and have a review of it, let me know…if not, please post one…I’d love to know if it is as good as it sounds!!!! Happy Menu Planning!

Hi EmmyJMommy, the recipes linked are all my own that I’ve tested and reworked before posting. I must make the Indonesian spicy rice 2-3 times each month. Do let us know if you try it. Thanks for visiting.

We love Grilled Aspargus with crushed garlic, salt and pepper. Yummy!
