Chipotle Sweet Potatoes

I like spicy foods a lot and when I saw recipes or references to chipotle chiles and sweet potatoes, I knew I’d have to try it.  I have never been fond of sweet potato recipes with sugar and mini marshmallows.  For one, the dish is usually cloyingly sweet, and also, it reminds me too much of the school cafeteria when I was a kid.  These chipotle sweet potatoes are different, they are a bit sweet, a bit savory, and a bit hot.  Very delicious.  There’s no added sugar, and the fat can be reduced substantially from traditional mashed potatoes.  I sometimes add a bit of butter for taste.

Chipotle Sweet Potatoes

2 large sweet potatoes, peeled and cubed
1-2 canned chipotle chile in adobo sauce
1/2 t adobo sauce from the can
2 T milk, lowfat dairy or soy
salt to taste

Bring a pan of water to boil and add sweet potato cubes.  Boil until cubes are very tender, about 12 minutes.  Drain.  Mince the chiles and add all of the ingredients with the drained sweet potato cubes back in the pan.  Mash with a potato masher until almost smooth, adding milk to achieve the texture you want.  Salt to taste.

Hi unfinishedmom, last year, I did this for Thanksgiving, wanting to try interesting twists on traditional dishes. So instead of the usual mushy green bean casserole, I served lightly blanched green beans with tomato and a tangy vinegarette dressing, and instead of the sweet potato casserole with brown sugar and marshmallows, I served the chipotle sweet potatoes. It seems to go well with relatively plain meats like turkey or ham.
