Menu Plan for Week of March 22, 2009
It feels good to be back home and able to plan meals for myself (and the hubby). As I’ve been telling all of my friends, the food available to travelers is often both unhealthy and expensive. This week, we are turning to some standby meals that are heavy on the fruit and veggies. I’m excited to see spring veggies appearing.
Breakfast: Migas w/ refried beans, fruit
Lunches: leftovers, hummus, fruit
Dinners:
Sunday: Indonesian spicy rice w/ egg, stir fry veggies, fruit salad
Monday: Grilled fish, sweet potatoes, roasted asparagus, salad
Tuesday: Fish tacos w/ tomatoes and cabbage topping, refried beans, orange coleslaw
Wednesday: Riblets, sauteed spinach, sweet potatoes, fruit salad
Thusday: out
Friday: Crockpot Feijoada (Brazilian black bean stew), greens, rice, oranges
Saturday: Quick black bean soup, made from leftover feijoada, rice, Brazilian salad

The grilled fish meal sounds great. I hadnt thought of serving more than 2 veggies per meal, but why not? Veggies are often the highlight for me. I can tell you love them too.

I have to agree with Elizabeth–What a pretty blog. Your menu for the week looks good, too. I will have to try your Indonesian rice recipe. It’s like my fried rice, but with more flavor.
Hi Elizabeth, thank you. I now frame the meal around the main veggie(s) which has made a big difference in the amount that we eat and also in the ability to easily plan a gluten free meal. Thanks for hosting GF menu swap.
Hi Wendy, thanks for visiting. Hope you like the rice recipe. I like the mix of spicy, salty, and slightly sweet flavors. It’s much more interesting than traditional fried rice.

oh gosh, I haven’t had migas in years. I used to love them!
Cheryl, migas and re-fried beans is now my go-to late breakfast or brunch meal.
