Healthy Potato Recipes
In honor of St. Patrick’s Day, I thought it would be great to celebrate the humble potato. If I had to pick the one unhealthy food that I miss, it would be really good fried potatoes, like fries made crispy by double frying Belgian style. Fortunately potatoes can be made in a variety of ways which are much healthier. If you love mashed potatoes, you can mix in additional vegetables to make them healthier. This recipe for healthy mashed potatoes adds cabbage colcannon-style. I usually scrub potatoes well, cut away the eyes and bad spots, but leave them unpeeled.
Another way to add great taste and vitamins to regular white potatoes, is to combine them with sweet potatoes which I like to do for mashed and roasted potatoes. To spruce up the flavor of roast potatoes, toss them with fresh herbs or lemon zest.
Mint or lemon roasted potatoes
1 lb. red or yukon gold potatoes
1-2 sweet potatoes
1 T olive oil
2 cloves of minced garlic
for mint: 2 T mint leaves minced
for lemon: 1 lemon, zest and juice
Salt and pepper to taste
Wash and trim potatoes and cut into wedges. For herb potatoes, toss with olive oil, mint, garlic, salt and pepper. For lemon, toss with olive oil, lemon juice garlic, salt and pepper. Bake potato wedges in one layer on a baking sheet for about 40-45 minutes, turning once. The edges should begin browning and get crispy. For lemon potatoes, toss roasted potato wedges with zest.
