Menu Plan for Week of March 15, 2009

I am currently eating some delicious oranges.  This year’s navel oranges are particularly sweet, and I have been eating oranges and putting them in a number of fruit salads, salads with spinach, and coleslaws.  For last week, the two favorite dishes were salmon chili and lentil stew.  The stew was of such massive portions, that we had it for two days.  I’ll have to post the recipe soon.  This week, I fly out for a business trip, but I’m posting the meals we are having and that I am leaving for hubby to heat up.

Breakfast: Healthy baked oatmeal, boiled eggs, fruit
Lunches: leftovers, rice cakes and peanut butter, fruit

Dinners:
Sunday: Black eyed peas and collard greens, fruit salad

Monday: Beef and Broccoli, brown rice, orange coleslaw

Tuesday: Lentil, swiss chard stew (leftover from freezer), salad, ambrosia

Wednesday: Riblets (not gluten free), healthy mashed potatoes, steamed broccoli

Thursday and Friday: Out

Saturday: Salmon and potato cakes, sweet potatoes, braised red cabbage, winter fruit salad

My favorite orange is Valencias. Delcious!
