Menu Plan for Week of March 8, 2009

Last week, hubby’s favorites were the Mexican chicken soup and chicken enchiladas.  I think he likes spicy foods.  We went out for dinner one night, and the portions were huge, so I had them pack up the rest of the meal for dinner the next night.  So, I never got to try cooking with tempeh.  For this week, I’ve put fish on the menu.  The benefits of wild salmon seem to just increase.  For the salmon, I use the same principles in the piece on Almost Meatless Meals, although Almost Fishless doesn’t sound very appetizing.  However, the salmon plays a supporting, rather than fully central role, in two dishes: salmon chili and Thai salmon and vegetable curry.

Breakfast: Banana and oat bars, eggless joe (scrambled tofu), fruit
Lunches: leftovers, tuna over greens, fruit

Dinners:
Sunday: Lentil, swiss chard stew with a bit of sausage, fruit

Monday:
Thai style red coconut curry with salmon, pineapple, and veggies; brown rice, bok choy

Tuesday: Salmon chili, steamed broccoli, ambrosia

Wedensday:
Stir fry veggies (maybe with tempeh), brown rice, winter fruit salad

Thursday:
out

Friday: Spinach and chickpeas, riblets, sweet potatoes

Saturday: Black eyed peas and collard greens, fruit salad

Love your menu!! I absolutely love Scrambled Tofu (my recipe is a little different), and the Banana and Oat Bars sound simply yummy! I will be trying that recipe very soon! Thanks for sharing!

Our teen made a delicious salmon for Sunday dinner. I so enjoy eating light several times of the week.
Just taking some time away from household duties to do some MPM blog visiting.
