Menu Plan for Week of March 1, 2009

Chicken is on the menu this week.  I start by roasting a an organic chicken on one day and using the leftover chicken meat and stock made from the bones throughout the week.  I’m also trying tempeh this week, which I’ve never cooked with before.  If it’s good, I’ll post the recipe later.

Breakfast: Oatmeal, kefir green smoothies, migas
Lunches: leftovers, miso soup, apples

Dinners:
Sunday:
Roasted whole chicken and garlic, roasted carrots and sweet potatoes, broccoli

Monday: Mexican chicken soup with squash and green beans, rice, salad, fruit salad

Tuesday: Easy chicken enchiladas, refried beans, sauteed zucchini, apple ginger coleslaw

Wednesday: Indonesian spicy rice w/ eggs, stir fried veggies, ambrosia

Thursday:
Tempeh curry, brown rice, bok choy, fruit salad

Friday:
Out

Saturday: Chickpeas and greens, riblets, sweet potatoes, fruit
