Menu Plan for Week of Feb 15, 2009
With the weather cold and bluster, I will be making a big pot of soup today. A wonderful soup a couple of weeks ago is the black eyed pea and collard green soup. I’m making a derivative of this, based loosely on the traditional Italian wedding soup, which usually has greens and meatballs simmered together. I hope it turns out as well. I also love the new healthy oat and banana bars that have no added fat or sugar.
Breakfasts: Healthy oat and banana bars, fruit, yogurt
Lunches: Leftovers, hummus, veggie sticks, apples
Dinners:
Sunday: Healthy Italian Wedding Soup (w/ collard greens, white beans and turkey meatballs), brown rice, fruit salad
Monday: Fish tacos, cabbage, fresh salsa, corn and zucchini, fruit salad
Tuesday: Leftover Italian soup, salad
Wednesday: Sweet and sour fish, broccoli, brown rice, ambrosia
Thursday: Out
Friday: Spinach and whitebeans, veggie burgers, sweet potatoes
Saturday: Crockpot split pea soup, salad

I’d love to know your recipe for Healthy Italian Wedding Soup! I make my own Wedding Soup, but I wouldn’t necessarily call it “healthy”(http://butihadatiara.blogspot.com/2008/10/soups-on-saturday-escondido-wedding.html). Hi Tiffany, I ran short of time yesterday and moved the soup to Monday or Tuesday. Right now, I’m planning on using a pound of collard greens, 1/2 pound of ground turkey rolled into meatballs, a small can of tomato sauce, and lots of carrots simmered in a chicken stock. Will try to post this in your next soup carnival once I test the recipe.

Hi Joan, thanks for visiting, if you click on the recipe category on the right column, it will show all of the recipes that I’ve posted. Obviously, the vast majority of recipes are yet to be posted, but I wanted to hold off and test each recipe for taste and substitutions before posting. Hopefully, this collection will grow over time. If you have a specific recipe that you would like to see, let me know and I’ll try to make that one next.
